Mayonnaise Safety: How Proper Handling Can Help Prevent Foodborne Illness

Mayonnaise is often blamed for food poisoning outbreaks at picnics, barbecues, and buffets, but the ingredient itself is not usually the main cause of illness. Modern commercially produced mayonnaise is made with pasteurized eggs and acidic ingredients like vinegar or lemon juice, which help reduce the growth of harmful bacteria.The confusion comes from the way mayonnaise is commonly used and stored rather than the product itself. When mayonnaise is added to dishes like potato salad, chicken salad, or coleslaw, the real risk often comes from other ingredients such as meat, eggs, or dairy that may already contain bacteria.

Food safety problems usually begin when prepared foods are left out at room temperature for too long. Warm conditions allow bacteria like Salmonella or Staphylococcus aureus to multiply quickly, especially in protein-rich foods mixed with mayonnaise.Another common issue is cross-contamination. Using the same spoon or knife for different foods and then placing it back into a mayonnaise jar can introduce bacteria. Even small amounts of contamination can grow over time if the product is not refrigerated properly.

Once a jar of mayonnaise is opened, proper storage becomes important. It should be kept sealed and refrigerated according to the manufacturer’s instructions. Leaving it out during long outdoor meals increases the risk of spoilage.In large gatherings, food often sits unrefrigerated for hours, which makes it more likely that illness is caused by temperature abuse rather than the mayonnaise itself. This is why outbreaks are often wrongly linked to it.

Good hygiene practices such as using clean utensils, keeping cold foods cold, and avoiding prolonged exposure to heat significantly reduce the risk of foodborne illness.In conclusion, mayonnaise is not inherently dangerous. The real issue is improper handling, storage, and contamination of the foods it is mixed with. With correct food safety habits, it remains safe to eat in everyday meals and outdoor gatherings.
